MANHATTAN, Kan. -- The American Institute of Baking here is offering a set of new video training tapes designed to teach retailers "old-school" baking.

"We're trying to create a way to bring old-school skills to the modern baker," said an AIB source. The videos can be used to convey an understanding of the fundamentals of baking by walking new employees through the various processes and quality control points, the source added.
Specific skills covered include ingredient use, proper mixing, dough temperatures, dough additives, handling practices, variety from a single dough, proofing time, temperature and humidity, baking/heat, heat transfer and the use of steam in baking.
