h-cholesterol food choice -- are back. Record prices, the low-carb diet craze and a wholesome new image helped boost sales of refrigerated fresh eggs more than 25%, to nearly $3 billion, for the 52 weeks ending June 13.

Furthermore, the category includes a host of new products aimed at consumers looking for added value and willing to pay for it.

Specialty eggs, whether infused with Omega-3 fatty acids or laid by free-range chickens, have generated a great deal of new interest in the category. While egg substitutes account for a tiny percentage of overall consumption, the category experienced a 33% sales spike, to $185 million, indicating this segment is likely attracting new consumers through appeals to convenience or dietary concerns.

Sales of eggs at drug stores have almost doubled during the past two years, albeit from a small base. Sales jumped up 76.5%, to $16 million, over the same period. Supermarkets dominate the category, responsible for almost $3 billion in sales during the period.
