The three-day event will focus on the latest equipment, component technology, corn and wheat flour ingredients, packaging ideas and materials and additives for the tortilla business, which the association calls the fastest-growing segment of the baking industry.

Business sessions on Wednesday and Thursday mornings will focus on "2001 and Beyond," "How to Grow Bigger by Acting Smaller," "DSD Management -- Getting the Most Out of Your Route Sales" and "Keeping It All for Yourself and Your Family."

Trade expositions include 120 booths.

Case With Multiple Uses Unveiled

SPRING LAKE, Mich. -- Structural Concepts Corp. here has introduced a new bakery merchandising unit that is a combination of a self-service case and a decorating station.

The fixture has a three-level interior display area and, at 40 inches high, can be set up in line with other service and or self-service merchandisers to create an "activity center," according to the company.
