- The Eastern Dairy-Deli-Bakery Association here has scheduled a series of hands-on bakery and deli seminars.

The first, a bakery seminar, is set for April 25 at the Landmark Restaurant in East Rutherford, N.J. The deli seminar will be held May 9 at the Ramada Inn in Edison, N.J.

The bakery seminar, "Beginning and Advanced Methods of Cake Decorating," will offer a beginner's session and an advanced session on cake decorating for department employees and managers.

The deli seminar, called "Back to Basics," will include discussions on the marketing and merchandising of kosher and Hispanic products.

AIB Schedules Flat Bread Seminar

MANHATTAN, Kan. -- The American Institute of Baking here has scheduled a seminar on what's new in the technology of baking an old product -- flat bread.

The seminar at AIB, running from May 31 through June 2, will cover ingredients, formulations, production techniques and equipment requirements, and also offer practical advice on how to add flat breads to an existing product line.
