Auricchio to Produce Gorgonzola
io Cheese Co. here has begun producing handmade Gorgonzola, using an old Italian recipe.
The soft cheese, produced with specially designed equipment in a recently acquired manufacturing plant in Wisconsin, is similar to the imported variety, an Auricchio spokesman said.
"By producing the Italian specialty cheese here, Auricchio can provide distributors with a fresher product and enable consumers to enjoy Gorgonzola at its peak," he added.
The Gorgonzola and a Mascarpone are marketed under the BelGioioso brand name.
Bally Unit Opens Blast Chiller Plant
BALLY, Pa. -- The Northwind division of Bally Engineered Structures here has opened a 47,000-square-foot manufacturing facility at Bally's headquarters complex.
The division manufactures blast chillers in three sizes to chill prepared foods. The equipment can help food-service operators stay in compliance with federal, state and local regulations, the company said.
