Pretzel-Making Seminar Set

American Institute of Baking here will present a seminar on pretzel-making, April 11 to 13.

Called "Pretzels -- From Process to Consumer," the sessions will cover ingredients, equipment and processing, and will include updates on the nutrition labeling law and on consumer eating trends.

One morning will be devoted to the production of soft pretzels. A hands-on demonstration will be featured.

Dawn Food Offers Nondairy Icing

JACKSON, Mich. -- Dawn Food Products here has introduced a nondairy, frozen, ready-to-whip icing, topping and filling.

Available in vanilla and chocolate, the nondairy product is designed to have the texture of whipped cream and the decorating capability of buttercreme, the manufacturer said.

Dawn is a manufacturer of bakery mixes and bases and also provides a complete line of icings, fillings, frozen products and equipment.
