In a survey of 1,000 consumers, conducted by the Opinion Dynamics Corp., respondents reported having at least one "flexitarian" in 14% of households, and at least one vegetarian in 3% of households. More than 30% of respondents in flexitarian families reported the level of occasional vegetarian eating had increased in recent years, while 29% of respondents in vegetarian households said strict vegetarian eating had gone up. The researchers defined a "flexitarian" as someone who eats a mostly vegetarian diet that allows occasional meat, while a vegetarian never eats meat, poultry, seafood or animal products of any kind.
