MADISON, Wis. -- The International Dairy-Deli-Bakery Association has chosen three store-level cake decorators to compete in its 10th annual Cake Decorating Challenge at the Dairy-Deli-Bake Seminar and Expo, June 5 to 7, in Minneapolis. The finalists are Gwen Kottman, representing a Fry's Marketplace unit, Phoenix; Xiomara Urbina, from a Publix Super Market in Miami; and Stacy A. Wade, Lamb's Thriftway, Wilsonville, Ore. The cake decorators will compete against each other on the show floor where they must decorate several cakes, including a wedding cake, and then merchandise an 8-foot case. The finalists were selected in a blind review process from a pool of 65 entrants who submitted photo albums showing examples of their work, said IDDBA executive director Carol Christison.
