LAUREL, Md. -- The Retail Bakers of America here is developing a certification program for specialists in several areas of expertise.
however, advanced certification will be available, via examination, in the following categories: cake decorating, doughnuts, bread and rolls, and sales and merchandising.
Project development groups, made up of experts in the industry, are currently working on procedures, criteria and testing measures for each category. Later, other specialty areas such as general management, cakes and sweet doughs, will be added to the certification program, an RBA spokesman said.
