LAUREL, Md. -- A seminar called "Up Against the Wal-Marts," focusing on bakery's role in competing against supercenters, will highlight the Marketplace '97 convention-exhibition of the Retailer's Bakery Association, which will take place in Chicago April 19 to 21.

in the RBA's educational lineup for the convention will address retailer concerns that include recruiting effective employees, doing profitable promotions, defining the role of the in-store bakery in home-meal replacement, figuring out how computers can help in all facets of bakery operation and enhancing profitability.

The program is rounded out with seminars on the production and marketing of bagels and doughnuts. A tour of exemplary Chicago bakeries will cap the convention program on Tuesday morning, April 22.
