ST. LOUIS -- Meat department associates of Schnuck Market stores and representatives of the Potosi, Mo.-based Sayersbrook Bison Ranch recently fired up a grill and prepared lean bison for shoppers to sample as part of an in-store demonstration.

The meat is higher in protein than beef, yet lower in calories than salmon or skinless chicken, so it should appeal to carb-counting customers, said Cy Jansen, vice president of meat operations.

Though it is a niche product, bison has developed a following with shoppers who are aware of its nutritional value and place frequent special orders for it, said Schnuck spokeswoman Lori Willis.

The demonstration was conducted mainly to let customers know they can get the meat at Schnuck stores.

"We found that once people tried bison, they enjoyed the taste and tenderness of the meat and were inclined to buy it," Willis said.

"We noticed a couple of the samplers later stopped to purchase the meat before leaving the store," she said.
