ORLANDO, Fla. -- Ethnic foods are hot -- and cold -- and everywhere in the fresh-foods departments of supermarkets these days, and the International Dairy-Deli-Bakery Association's Show & Sell Center made the most of the trend at this year's annual convention. Real-life displays were featured in the World Cheese Authority, New Order Deli, Old World Bakery and Aahhhh La Carte. Now in its 13th year, the Show & Sell Center brought together retailers, equipment vendors and food manufacturers to build creative, cogent merchandising schemes that can be used in part or in whole by chain or independent operators. The theme borrowed both from history (age-old artisan bread recipes) and took a broader view of the world in which we live (purple Peruvian potato salad) -- all for the purpose of providing food operators with a map to navigate future success in their own stores.
