Schnucks joins coconut craze

Schnuck Markets, St. Louis, is promoting a variety of coconut products carried throughout its stores, from coconut water to oil.

“No longer is coconut limited to the baking aisle,” Kara Behlke, a Schnucks dietitian, writes in a company blog. “You can find a variety of coconut products throughout the store to suit your lifestyle, satisfy your taste and inspire a number of culinary creations.”

Behlke goes on to describe the health benefits of coconut water, milk, flour and oil.

“If you are just looking to add a little variety to your standard beverage lineup, unsweetened coconut water is relatively low in calories, an excellent source of potassium and often has less sugar than soda,” she said.

Indeed, coconut water has grown in popularity because it contains naturally high levels of electrolytes, including potassium, calcium and magnesium. This has made it popular as a sports drink.

While coconut water has been widely publicized over the years, other coconut-based products are also hitting the market. Coconut oil, for instance, is said to help strengthen the immune system and prevent obesity.

“Cooks in Asia and the Caribbean have long used coconut milk and coconut oil the same way cooks elsewhere might use cream or butter,” Behlke writes.
