Clean Labels Key Topic at Seminar

BALTIMORE — The challenge of simplifying ingredients lists will be addressed at the bi-annual Healthy Baking Seminar on September 21 at the Baltimore Convention Center, hosted by Modern Baking and Baking Management magazines.

BALTIMORE — The challenge of simplifying ingredients lists will be addressed at the bi-annual Healthy Baking Seminar on September 21 at the Baltimore Convention Center, hosted by Modern Baking and Baking Management magazines.

The event will take place during Natural Products Expo East, which runs in Baltimore from September 21 to 24. The baking magazines and Expo East are part of Penton Media, which is also the parent company of SN.

HBS will address a variety of health topics that face bakers and retailers alike. Increasingly, consumers are focused on labels and ingredients lists, asking questions about which sweeteners are used in cookies or if there are shelf-life-increasing additives in bread. The consumer message seems to be: reduce the number of ingredients and make them more natural.

In a session called “Cleaning House: Developing and Marketing Clean Label Products,” David Caine, Aunt Gussie’s All Natural Cookies and Crackers, and Marilyn Stieve, Glanbia Nutritionals, will address this topic.

Other sessions will focus on topics including antioxidants, allergen-free baking, ancient grains, fiber and health and gluten-free baking.
