ST. PAUL, Minn. — Kowalski’s Markets received its first ever shipment of Berkshire pork this week and will feature it Dec. 8 at its chainwide, annual Taste of the Holidays Event.
Until recently, Berkshire pork has had a presence primarily on upscale restaurants’ menus. A natural product from a heritage breed of pig, Berkshire pork is noted for its flavor, marbling and tenderness.
“We’ll be offering tastes of rack of Berkshire pork roast at a carving station in the meat departments. Probably no sauce with it, because we want customers to get the full taste of the pork,” Rachael Perron, Kowalski’s culinary director, told SN.
“We’ll tell our customers we’ll have this local Berkshire pork — raised in Minnesota and Wisconsin — in various cuts, available for their holiday entertaining.”
A rack of Berkshire pork retails for $9.99 a pound at Kowalski’s, $2 more than for a rack of regular, all-natural pork.
The company will offer cooking advice at the event, and is suggesting as an accompaniment to pork, its fruited wild rice pilaf sold in the deli.
The 10-unit independent aims each year to tempt customers with something new at its Taste of the Holiday events. Another new item this year is its champagne cake.
“It’s a white cake with a filling made with whole raspberries and topped with a lightly whipped butter cream icing,” Perron said. Both the icing and the cake are flavored with real champagne.
The pork roast and the cake are just two of the items that’ll be offered for tasting at the Taste of the Holidays Event, held from 11 a.m. to 5 p.m. in all of Kowalski’s stores. All the fresh food departments will be offering several items for tasting, Perron said.
