Wedge Co-Op to Purchase Gardens of Eagan

MINNEAPOLIS — The Wedge Co-Op, a natural and organic food cooperative here, said it will purchase Gardens of Eagan, an organic farm in Farmington, Minn. The move will secure local supply of organic foods including corn, tomatoes and melons for Wedge and other customers and will help broaden the co-op’s outreach, the organization said in a statement. The Wedge, which was Eagan’s largest customer, claims to be the largest single-store food co-op in the United States, with 13,000 members. Transition of ownership will begin Jan. 1, Wedge said.
