REDWOOD CITY, Calif. — Safeway has opened “Citrine,” a restaurant separate from its supermarket locations, as a test kitchen. As previously reported, the restaurant, located in a small retail center here, will test recipes for the prepared food sections in Safeway’s stores, according to industry sources. While Safeway officials continue to decline comment on the restaurant, SN learned that it opened to the public earlier this month, albeit with no fanfare or any publicity from Safeway. According to one observer, "Safeway is using it as a test kitchen. It's open simply to test a number of different recipes." The restaurant, located just behind a Safeway store here, uses only products available through the chain's distribution center.
