Sartori’s Offering Limited Edition Extra-Aged Goat Cheese

Sartori Cheese has announced its second ever release of Limited Edition Extra-Aged Goat cheese.  This hand-crafted cheese, which met rave reviews during its first release in June 2012, will be back in time for the holiday season.

This cheese has already gained international recognition, taking home a Gold Medal at this year’s Global Cheese Awards held in Somerset, U.K. and a silver medal at the 2011 Global Cheese Awards, as well as a top 3 finish at the American Cheese Society competition. Sartori cheesemaker Pam Hodgson wanted to create a goat’s milk cheese that was approachable to the tentative taster, yet maintained an “authentically goat” flavor profile for the goat cheese connoisseur, says Hodgson. “It’s a well-balanced and milder goat cheese. We allow this cheese to patiently age which enhances its savory, caramel notes and creamy, smooth finish.”  logo in a gray background | The Limited Edition Extra-Aged Goat cheese is created in small batches.  Each wheel is individually handled and artfully cared for by experienced Sartori team members; the Extra-Aged Goat cheese is truly an artisan cheese.  “It has taken us years to develop this cheese.  We’ve experimented with numerous techniques and aging processes and over time, we’ve found the right balance for aging the cheese nearly twice as long, which allows some of those earthy flavors, which are natural to goat cheese, to mellow,” says Pam. “We are thrilled for a chance to again release our Extra-Aged Goat cheese,” says third generation Sartori CEO, Jim Sartori.  “The positive reaction and acceptance of the product from our retailers and customers during the initial release was inspirational.  I want to thank our cheesemakers and goat dairy farmers for working hard to have top quality product in time for the holiday season.” Sartori’s Limited Edition Extra-Aged Goat cheese will be available at select specialty cheese shops throughout the United States.  Additionally, a limited supply of 4-oz. wedges will be available for sale on the Sartori website, www.sartoricheese.com and will be included in the 2012 online “Limited Edition Gift Box” this holiday season.
