Texas grocer H-E-B has turned to one of its own for an exclusive line of hardwood smoked sausages.

Hardcore Carnivore, which is also based in Texas, makes meat seasonings and rubs, and will be partnering with Standard Meat Company for the sausage offerings.

Hardcore Carnivore creator Jess Pryles is originally from Melbourne, Australia, but now resides in Austin, Texas, and made the decision to use real hardwood smoke for the sausages rather than relying on a bottled smoke flavor. After all, Pryles is a live-fire expert.

“Creating these sausages was the next logical step for the Hardcore Carnivore brand,” Pryles said. “All the flavors are designed to recognize and honor different aspects of Texas heritage.”

Pryles already had a relationship with Standard Meat Company, which figured out a way to use real hardwood smoke for the sausages.

The Hardcore Carnivore premium sausages are certified Go Texan by the Texas Department of Agriculture and are gluten-free with natural casings. The sausages come in four flavors: Tex Mex, beef with beef brisket, jalapeno cheddar, and prime rib flavor.
