Lunds & Byerlys prep opening of Apple Valley, Minnesota, store

This will be the 29th location for the regional grocer. The store features an extensive retail foodservice selection.

Minnesota-based Lunds & Byerlys is slated to open its newest store on Thursday.

Lunds & Byerlys Apple Valley, located at 15550 English Ave., hosted a sneak peek weekend in advance of the grand opening, inviting future shoppers to the store’s parking lot for giveaways, samples, local craft beer sampling, face painting and store tours. Apple Valley is about 20 miles south of Minneapolis.

A highlight of the new store is the L&B Kitchen, which features a wide assortment of prepared options for breakfast, lunch and dinner. Among the foodservice choices are Taco Max (a build-your-own taco, nacho or burrito bar); Wok Bar (a build-your-own bar with rice bowls, noodles, steamed vegetables, sauces, wontons and dumplings); Hissho Sushi; salad bar; and a hot food bar with comfort-food favorites and globally inspired disuse.

The Apple Valley Lunds & Byerlys also includes eight self-service taps for local beer, an indoor mushroom-growing station in the produce department, a full-service Caribou Coffee cafe, reserve aged beef, indoor and outdoor dining areas, a full-service floral department, and online pickup and delivery.

This is Lunds & Byerlys’ fourth store that uses environmentally friendly CO2 refrigeration systems, as well as LED lighting, and high-efficiency HVAC and boiler systems.

“We are committed to investing in environmentally friendly practices to reduce our carbon footprint,” the grocer said on its website.

The Apple Valley store will become the 29th Lunds & Byerlys supermarket in the Minneapolis-St. Paul area.

The first Byerlys store opened in Golden Valley, Minnesota, in 1968, nearly 30 years after Russell T. Lund opened his first Hoves grocery store. Lunds acquired Byerlys in 1997 and created Lund Food Holdings. In 2015, all former Lunds and Byerly’s stores became “Lunds & Byerlys.”
