New PCC store to feature first Rotisserie

PCC Natural Markets’ 11th store, opening in Bothell, Wash., on July 12, will introduce a new concept called Rotisserie for slow-roasted meats prepared in-store.

PCC Natural Markets’ 11th store, opening in Bothell, Wash., on July 12, will introduce a new concept called Rotisserie for slow-roasted meats prepared in-store.

The retailer said Rotisserie meats would be brined, seasoned, rubbed and roasted in the store every day. The menu will always include organic chickens and Non-GMO Project Verified porchetta, as well as a rotation of other meats.

The Bothell store will also include PCC’s second Taqueria, where the menu will feature pork adobado, beef barbacoa, roasted squash and garbanzos, and chicken verde made with Non-GMO Project Verified chicken plus rice and beans, aguas frescas and freshly prepared salsas. The first Taqueria can be found at the retailer’s Columbia City location in Seattle.

PCC plans to donate leftover prepared foods to the Northshore Nourishing Network as part of a pilot program that is another first for the retailer.

The Bothell PCC captures that pioneering spirit and sets a new bar for future PCC stores.”

According to the store’s website, the Bothell location takes over part of the space previously occupied by an Albertsons. PCC’s newest store will measure approximately 25,000 square feet.
