Castello Cheese Introduces Extra Mature Cheddar to the U.S.

Castello, maker of creatively crafted imported cheese, will introduce its first cheddar cheese to the U.S. market this year. Castello Extra Mature Cheddar won multiple awards at the 2015 British Cheese Awards, including a gold medal for Best English Cheddar Cheese.

Castello Extra Mature Cheddar is aged for at least six months, resulting in an exquisitely rich and sharp flavor with balanced sweet and salty notes. The cheese features delicate flavor crystals that create a crunchy texture and delightful tasting experience. On the cheese’s surface are clusters of calcium lactate, which impart a unique mouthfeel from the first bite. Within the cheese are crystals of the amino acid tyrosine, which create a delicious crunch that lasts throughout the tasting experience.   

Castello Extra Mature Cheddar is crafted using traditional methods at southwest England’s Taw Valley Creamery, using milk collected from more than 700 nearby dairy farms. The cows are grass-fed most of the year due to the mild climate, resulting in extra rich and creamy milk, as well as superior quality cheddar.
