Everything is bigger in Texas—including this year’s Dairy-Deli-Bakery Seminar & Expo. Exhibit space sold out months in advance for the 2016 edition, set to take place from June 5-7 at the George R. Brown Convention Center in Houston.

When attendees are not busy strolling the show floor to visit the vast array of manufacturers and equipment and packaging providers showing off their wares, they have many opportunities to learn from the various speakers and workshops the show provides.

On June 6, the International Dairy-Deli-Bakery Association’s (IDDBA) CEO Mike Eardley will discuss what is in store for the future and four of the six influencers on retail. Other notable speakers include chef and author Anthony Bourdain, Houston Texans football player J.J. Watt, ABC’s Shark Tank star Lori Greiner, comedian Jerry Seinfeld and more. 

The Show & Sell Center is also back, and IDDBA officials have announced its key highlights in anticipation of the event. Some of the new merchandising ideas to be seen this year include ideas for cheese, cakes, bakery, deli and meals. 

For a preview of some of the best IDDBA will have to offer, here is a look at what can be found at some of the exhibiting companies:

ADUSA is a provider of omni-channel fresh foods technologies specifically designed for all of the fresh foods departments in supermarkets. Its portfolio includes Self-Order Kiosks, Order-Taking Tablets, Web and Mobile Self-Ordering, Order Management, Queue Management and Basic Queueing Solutions. This year the company will debut its Fully Integrated Digital Menu Boards and Digital Displays.

Anchor Packaging will display its clear SAFE PINCH Tamper-Evident hinged containers. The container leaves no plastic strip and has a visible, wide separation opened hinge designed to make it easy for consumers to identify a tampered product. It is designed for packaging nuts, snack mixes, candy, baked goods and dried fruit, or for refrigerated fresh food displays. The container features a leak-resistant design and is available in 20-, 24- and 32-ounce sizes.

Visitors to the Applied Data Corp. booth will experience a demonstration of the company’s NutriGen Recipe Manager system. The NutriGen system is designed to generate accurate ingredient labeling panels, including allergen and nutritional information; centrally define recipes, combining vendor supplied sub-assemblies with raw materials; and calculate the true cost of recipe items, including packaging and labor.

Bake’n Joy will focus on its range of muffin products. The company has evolved from providing premium bakery ingredients and mixes to its current offerings: FreshBakes Predeposited Muffin Batters and PanFree Muffin Batters. FreshBakes are available in five sizes, several formulas and many flavors. Bake’n Joy officials say that its variety of operations ensures it can find a fit for each retailer.

Bel Brands will show its latest innovation from The Laughing Cow brand, Cheese Dippers. Cheese Dippers are an all-in-one snack that features The Laughing Cow’s creamy cheese along with breadsticks. It comes in individual, portable packaging that makes it ideal on-the-go. The product is made with no artificial flavors, preservatives or colors. It will be available in two varieties.

Blount Fine Foods is a manufacturer of fresh, premium handcrafted soups, entrées, sauces and side dishes for retail and foodservice. Blount makes a full line of refrigerated soups sold to retailers and club stores nationwide under the Legal Sea Foods, Panera Bread and Blount brands. The company also makes premium private label refrigerated soups, and provides hot to-go soup bar offerings for retailers’ prepared foods sections.

Boulder Organic Foods plans to debut two garden-fresh soups at its booth, located in the organic pavilion. Both soups will feature organic chicken and are made with certified organic, gluten-free and non-GMO verified ingredients. The two new varieties, Chicken Quinoa & Kale Soup and Chicken Vegetable Chili, are sold fresh-refrigerated in 16-ounce tubs for a suggested retail price of $4.49, and in 128-ounce boilable bags for foodservice.

Carando Gourmet will showcase its Priscilla’s and Country Chef lines of gourmet baked meals and country chef homestyle comfort food. Carando’s meals are fully cooked, pre-portioned for ease of use and many include re-labels. The products are stored and shipped frozen for improved shelf life. Some of the products to be on display include Two Inch Deep Fluted Cream Cheese Crust Quiches and Signature Round Lasagna Pies.

Clear Lam Packaging manufactures flexible and rigid packaging materials for retailers, consumer packaged goods companies and foodservice providers.  Officials at Clear Lam’s booth will discuss its two lidding film technologies: Peel and ReSeal and the SealChoice PET family. The Peel and ReSeal system is designed to eliminate rigid pre-formed lids and shrink-bands and reduce package weight. Peel and ReSeal is best suited for prepared meals, produce, meats, cheese or cultured dairy and bakery products.

The product is designed to deliver accurate, intense and consistent color so bakers can create the right hue with any type of icing. It is offered in gel, airbrush, paste, all-natural gel, shimmer airbrush and candy colors. The concentrated color formula saves bakeries money by allowing them to use less, officials add.

Emmi Roth will display its new melting cheese, Natural Melt Creamy Fontina. Designed to meet the needs of foodservice professionals, the new cheese is naturally crafted to melt. It is made from three ingredients—pasteurized cultured milk, enzymes and salt. The product features an approachable flavor and velvety texture, according to company officials.

Freshway Foods offers fresh deli salad kits, grab-and-go salad kits and salad bar components that are packaged to be assembled in-store. The company will be launching a new packaging design and logo for its Plainville Farms brand. New deli meats, bacon and franks will also be introduced, all of which stick to the company’s commitment to natural and organic standards.

The Hormel Foods Deli by Design team is committed to a new, innovative vision for deli, and will work with retailers to develop customized solutions. The company will be displaying all of its latest offerings, ranging from prepared foods applications to new offerings from the HORMEL GATHERINGS portfolio and deli meats like FIAMMA Fire Braised Meats.

James Skinner Baking provides thaw and sell baked sweet goods for in-store bakeries. The company offers branded products under its J. Skinner line, one of the fastest growing brands in the in-store bakery section, according to company officials. Its latest items, J. Skinner Minis and Seasonal Danish Rings, will be among the products displayed at the company’s booth.

Kangaroo Brands will introduce Tandoori-Style Naan in Original and Roasted Garlic. The three-piece value pack is dairy-free, kosher and comes in a tamper-evident, zip-lock bag. The naan is made in the U.S. and offers a money-back guarantee. Booth visitors can sample the product and see Kangaroo’s full line of Pita Pockets, Salad Pockets Slider Pockets and Flatbreads.

The company is best known for its popular Land O’Lakes Deli American cheese and has a 95-year history of quality that ensures that it is trusted by consumers, say company officials. Land O’Lakes also offers Provolone, Muenster, and the brands Alpine Lace and New Yorker for the deli cheese section.

Lantmännen Unibake USA will display its range of products, including Euro-Bake par-baked artisan breads, Schulstad freezer-to-oven premium croissants and Royal Danish Pastries. Lantmännen’s newest product is the Schulstad Mini Signature Selection, a variety pack of five modern mini Danish in Salted Caramel, Strawberry Shortcake, Lemon Cheesecake, Toasted Coconut and Cherry Chocolate varieties.

It is designed for use with cakes, cupcakes, cookies or virtually any bakery dessert, officials add. Visitors can also check out Lawrence’s other icings, glazes, fillings and other products.

Producing authentic Asian sauces since 1888, Lee Kum Kee has brought its flavors from the East to the West. Attendees can sample the company’s ready to use sauces in Mandarin Orange, Teriyaki and Mongolian Beef. Also on display will be its latest spicy item, Gochujang, a Korean chili paste. Company officials will be on hand to discuss their custom sauce and manufacturing capabilities.

LINDAR will show attendees its innovations within food packaging manufacturing. LINDAR provides packaging for bakery, deli and produce products. Company officials say it specializes in creating packages that show off, keep fresh, secure and protect products. One of the more recent lines that will be on display is Simply Secure, LINDAR’s line of tamper obvious containers, available in two-piece and hinged varieties.

Manitowoc Foodservice designs, manufactures and supplies equipment for the global commercial foodservice market. Its portfolio of 23 brands includes Convotherm, Delfield, Garland and Merrychef. Among the items featured at the show for company officials to provide information on will be two new ovens: Convotherm 4 combi oven and Merrychef eikon e2s high speed oven.

Michigan Turkey Producers offers a complete line of quality turkey and chicken products in a variety of shapes, sizes and flavors. The company’s turkeys are harvested humanely using its patented Controlled Atmosphere Stunning system, which helps reduce blood spots and bruising in the meat, leading to higher quality products, officials say. All of Michigan Turkey’s products are free of the eight common allergens and contain no added MSG.

MIWE America, a German baking oven supplier, will show its Retro Condo electric deck oven. The Retro Condo comes in a black powder coated finish with etched half-moon glass to make it look like an old fashioned baking oven. It features four decks, each with separate top and bottom heat controls and one touch screen control to operate all decks. The control includes a built in library of photos of breads, or users can download new ones.

New French Bakery will display its Take & Bake Artisan breads line, which includes baguette, ciabatta, loaves, rolls and more. They are available par-baked for the in-store bakery or in retail ready packaging. Also at the booth will be cookies and crispy bars from sister companies Best Maid Cookie Company and South Coast Baking.

Old Wisconsin will display its Natural Cut and Fast Fuel snack lines. Natural Cut is a new, all-natural line of ready to eat, shelf stable sausage snack products. Organic Grassmilk Raw Sharp Cheddar Cheese is a semi-hard, eight-ounce white cheddar cheese.
