LAUREL, Md. -- The Retail Bakers of America here has released a deli skills training program on video.

The training program uses 10 video tapes and related workbooks, designed to teach employees the basics of deli operations. The self-paced program covers product knowledge, customer service, selling techniques, deli safety, receiving and storage, equipment and preparation, shrink control, merchandising, sanitation and general deli knowledge.

Participants take both pre- and post-program tests to ensure they are getting the benefits of the program. A companion training manual is included, which is designed to help supervisors assist employees with their training.

Peter Houstle, RBA's executive vice president, said the course's segments covering sanitation could be particularly useful for new deli employees.

"I would have to say the sanitation and safety modules take on added importance, since some states are making FDA's HACCP guidelines into state regulations right now."

The program can be purchased as a whole or in separate modules. The entire program is $499. Separate videos with a companion workbook are $49.

The program is guaranteed, Houstle said. "That means if you're not completely satisfied with it, we'll refund your money."

The videos were produced after more than a year's research. They were filmed in the deli departments of supermarkets. A review committee made up primarily of supermarket deli executives provided input.

Prior to the program's release earlier this month, Big V Supermarkets, Florida, N.Y. tested the program with its deli employees. The chain, which operates 31 stores under the ShopRite banner, used the program to train staffers before the grand re-opening, on June 4, of a renovated unit in Liberty, N.Y.

Big V officials praised the program. "RBA's deli skills training program played a major role in the fantastic performance of our deli staff. This was the best performance we've ever seen in a new store opening," said Jim Horton, director of human resource development.
