I'm in Nashville, Tenn. for this year's Annual Meat Conference, organized by the Food Marketing Institute and the American Meat Institute Foundation. 

The Gaylord Opryland Resort, the location of this year's show, is large enough to have its own man-made river and riverboat tours. There are scores of people wandering through the campus, clutching their resort maps and looking very lost. I think this is part of the charm of the place.

Tomorrow, Jim Beauvais, vice president, Meat and Seafood, Roundy’s Supermarkets, and Matt Monkiewicz of Kayem Foods, will kickoff the conference. I'm looking forward to Harvey Hartman's "Unwrapping Food Culture" presentation and Elanco president Jeff Simmons' talk about meeting the food supply needs of a growing population.

Monday and Tuesday I'll be reporting back on this year's The Power of Meat report and details on the new Uniform Retail Meat Identity Standards (URMIS) for pork. Stay tuned.
