KANSAS CITY, Mo. -- A study by the National Cattlemen's Beef Association, released during the annual Meat Marketing Conference here, finds that a potentially lucrative market exists for the underutilized chuck and round cuts of beef, particularly in the form of value-added products.

he goal was to develop new convenience-driven methods of processing that would make the cuts more consumer-friendly, according to researchers.

More than 50 representatives from all levels of the category endorsed the report, calling it a useful "first step" in building a market for the chuck and round. They support further tests, particularly after demand for beef has enjoyed its first real increase since 1976.
