ROCHESTER, N.Y. — Wegmans Food Markets here has doubled production capacity for prepared foods components with the opening of a new 53,000-square-foot research and development/production center this week.

The opening of the new facility, an extension of the chain’s meat shipping and receiving facility in Chili, N.Y., was first reported by Rochester Democrat & Chronicle writer Matthew Daneman.

The new facility, with greatly increased capacity, supersedes Wegmans’ Brooks Avenue production center, which will be demolished, Wegmans officials told Daneman.

The meat production area of the Chili location will turn out retail-sized and bulk sizes of soups, sauces and fresh food components that are used in Wegmans’ takeout meals and in prepared foods sold from the company’s service delis. Value-added and ready-to-cook meats and poultry, such as chicken cordon bleu, also will be assembled and packaged at the new facility.
