Eric Richard is an education coordinator at the International Dairy-Deli-Bakery Association (IDDBA) and has worked in IDDBA's Education Department for over three years. In that time, he has written the retail trends, consumer demographics, eating trends, and bakery chapters of the association's flagship research piece, What's in Store. He also works closely with the Show & Sell bakery and cake teams, and handles association industry and public relations.
