Bird in the Hand lands at Whole Foods in Florida

Fast-casual rotisserie restaurant opens at grocer’s West Palm Beach store

A new fast-casual restaurant, Bird in the Hand, made its debut at the Whole Foods Market store in West Palm Beach, Fla.

The American rotisserie eatery opened for business Tuesday at the 42,000-square-foot Whole Foods on Palm Beach Lakes Boulevard. Operated by Collab Hospitality, the concept was developed specifically with the Whole Foods Market customer in mind, the South Florida-based restaurant group said.

Bird in the Hand occupies the dining area at the south end of Whole Foods store. The restaurant is open seven days a week and serves its full menu from 11 a.m. to 9 p.m.

“We’re very excited to welcome Bird in the Hand to Whole Foods Market in West Palm Beach,” Rashne Desai, regional vice president for Florida at Whole Foods, said in a statement. “They have curated a delicious menu with cutting-edge rotisserie fare that forms the perfect bite to appeal to all palates.”

Themed around rotisserie proteins, Bird in the Hand offers entrees such as lemon rosemary bird ($14), twenty spice bird ($14) and black truffle prime rib ($18), all prepared in-house daily with a special combination of herbs and spices, Collab said. There’s also a signature option for vegetarians: fire-roasted cauliflower ($13). Side dishes include pretzel mac and cheese ($6), pee wee potato dippers with avocado aioli ($6), maple-roasted bacon brussels ($6) and garden mashed potatoes ($6).

Bird in the Hand’s menu also features sandwiches and salads. Choices include the bird in the hand rotisserie chicken sandwich with choice of sauce ($10) and the juicy beef and Cheddar sandwich with caramelized onion ($11). Salads — all of which come with the option of added protein — include spinach summer salad ($8), kale “horiatiki” salad ($8) and classic Caesar ($8). Customers also can choose from a  selection of house-made desserts, such as carrot cake ($5), chocolate peanut butter cake ($5) and red velvet cake ($5).

“Collab Hospitality is excited to be bringing this new fast-fine dining concept to the community,” said Manuel Bornia, CEO of Collab Hospitality, which in February launched the TYCA at Hai House Asian fusion restaurant concept in Palm Beach. “While the ideas and flavors are timeless, the interpretation is modern and fresh. It’s delicious, accessible and designed to be great both in-stores and delivered.”

Collab Chef Malcolm Williams will oversee Bird in the Hand’s culinary team. Collab also will manage dining service and restaurant operation.

The Collab partnership with Whole Foods is part of the retailer’s Friends of Whole Foods Market program, designed to bring shoppers innovative, in-store experiences with community chefs and culinary and lifestyle brands.

Besides Bird in the Hand, the Whole Foods supermarket houses La Crêperie de West Palm Beach, which serves made-to-order crêpes for breakfast, lunch and dinner. Other prepared food and beverages at the store includes Italian-style pizza; chef-prepared cuisine; and separate bars for coffee, juice, and beer and wine. The store offers seating for more than 130 people in its indoor and outdoor cafés.
